No-Bake Chia Chocolate Chip Oat Bars Recipe
I love these because they are quick to make and easy to take on-the-go for a protein-packed snack. The protein you choose really changes the taste so try experimenting with a few of your favorites to see which you like best.
No-Bake Chia Chocolate Chip Oat Bars
Prep Time: 10 minutes
2 cups GF rolled or quick oats
2-4 scoops protein powder (I use NuZest Smooth Vanilla or Natural, or Sprout Living's Vanilla Lucuma)
½ cup organic coconut oil (melted)
½ cup nut butter of choice (I use smooth raw almond butter)
¼ cup chia seeds
¼ cup pumpkin seeds
¼ cup honey or maple syrup
½ - 1 cup non-dairy chocolate chips (Enjoy Life dark chocolate or Lily’s)
Pinch of sea salt
Cinnamon and vanilla extract to taste (optional)
Combine all dry ingredients in a large bowl
Melt coconut oil and combine oil and all remaining ingredients with the dry ingredients
Once evenly combined, press into a casserole dish lined with parchment paper and place in the refrigerator to chill for 2 or more hours.
Once bars have hardened, remove from the dish, cut into squares, and place in a container in the fridge for a quick protein-packed snack throughout the week.
